Pork Menudo Recipe, Filipino style.
Fry the potatoes and carrots until halfway soft and then set aside.
Sauté the onions and bell peppers to release the flavors. Afterwards, add the tomatoes and pork. Season with fish sauce and add a bit of water enough to cover the meat and bring to the boil. Reduce heat and simmer for 15 minutes or until pork is halfway tender.
Add the tomato paste, liver spread, hotdog, garbanzos, green peas and previously sautéed potatoes and carrots. Add a bit more water if the mixture is drying up. Simmer for another 10-15 minutes until pork is tender.
(Optional) Add the Pork liver and simmer for another 5 minutes.
